Festive Bark Recipe 

Bark is one of the easiest things to make, and not necessarily a festive themed item at all, but for some reason I only think to make them at this time of year, so I’m sharing this festive bark recipe for anyone who wants a festive flavoured treat that isn’t Santa shaped.  

NUTRITIONAL INFORMATION  

I hate suggesting a serving size for this one because, honestly, if you want the whole thing in one sitting, you do you. But for the purpose of this recipe, I’m going to call a serving a fifth of the total recipe. Each serving contains 225 calories, 2.5g of protein and 3g of fibre, as well as 2.5mg of iron and 10% of the recommended daily amount of vitamin E.  

INGREDIENT CHOICES AND SUBSTITUTIONS  

You can make this without the vegan butter if you want to, but it helps make the chocolate a little smoother while it’s melting. Of course, you can make this bark with any toppings of your choosing such as other nuts, dried fruit or other crispy/ candied options like vegan honeycomb pieces, candied orange pieces or mini marshmallows if you don’t want a festive flavour.  

I used some 55% cocoa dark chocolate chips, but you can swap for a vegan milk/ white or a higher cocoa percentage if want a richer taste.  

HOW TO STORE 

Store in an airtight container/ wrapper and keep in a cool place or keep refrigerated.

This recipe is vegan and gluten free. It does contain nuts and may contain so depending on your choice of vegan butter and chocolate chips.

Ingredients

  • 150 g vegan chocolate chips
  • ½ tbsp vegan butter
  • 25 g chopped pistachios
  • 30 g dried cranberries
  • Zest of ½ clementine

Instructions

  1. Prep a baking tray with greaseproof paper or get a silicone tray to hand.
  2. Melt your chocolate chips and vegan butter in a heatproof bowl over a pan of simmering water. When everything is melted and smooth, transfer to your tray.
  3. Sprinkle over your toppings of choice and transfer to fridge for at least an hour to set or freeze for 30 minutes.
  4. When your chocolate has set, break into pieces and enjoy.
