Kiwi High Protein Breakfast Crumble Recipe

Kiwi high protein breakfast crumble recipe that tastes like dessert for breakfast; healthy breakfast for anyone with a sweet tooth. This high protein vegan breakfast recipe is a perfect simple breakfast for one, but you can easily multiply this if you want to make a larger batch for multiple servings. The crumble topping couldn’t be simpler; all you need is some protein powder, Greek style yoghurt, oats and almonds and you’re good to go. 

 I’ve made a kiwi breakfast crumble today as they’re in season, but you can opt for any fruit that you want. This would be delicious with summer berries or a classic apple option.  

NUTRITIONAL INFORMATION  

This is a single serving recipe, so the following information is for a full batch. Each serving contains 270 calories, 7g of fibre and 19g of protein. One serving also includes the full recommended daily amount of vitamin C, 60% of your daily vitamin K and 30% of your RDA of vitamin E as well as 20% of your daily B2. 

HOW TO STORE, REHEAT AND DOES IT KEEP?  

To reheat, you can microwave this dish for 2-3 minutes to lightly warm through, or if you wish to make it in advance, you can keep it covered in the fridge for 2-3 days and eat it cold if you don’t want to reheat it.  

INGREDIENT CHOICES AND SUBSTITUTIONS  

I used vanilla cookie protein here, so mine was a light brown colour to start with. If you’re using plain vanilla, your starting point will be more beige toned and will cook to a more typical golden colour.  

You can substitute the kiwi in this recipe for any fruit you want, just use a light layer to cover the base of your dish. And you can use an extra 10g of gluten free oat flour if you need to make this dish nut free.

Ingredients

  • 2 kiwis sliced
  • 1 tsp syrup of choice
  • 15 g vegan vanilla protein powder
  • 25 g vegan Greek style yoghurt
  • 10 g GF oats
  • 10 g chopped almonds

Instructions

  1. Preheat your oven to 180°c.
  2. Slice your kiwis and spread them across the base of a small oven friendly dish and drizzle with the syrup.
  3. In a small bowl, add all of your other ingredients other than the almonds and mix until it makes a crumble texture. It may take a few minutes to fully combine the yoghurt. Pour your crumble topping over the kiwis. Then sprinkle over the chopped almonds.
  4. Place in the oven for 20 minutes until kiwis are bubbling and the topping is golden.

Serve and enjoy!
