Vegan Strawberry Bircher Muesli Recipe

Once upon a time, I used to make a lot of overnight style recipes. I’m not sure what happened, other than maybe a slightly cooler than average summer and a typical British winter, but it’s been a while since I shared one. I thought about making a classic bircher muesli with raisins and grated apple, classic. But then I thought it could be a little bit more interesting and started working on a strawberry bircher muesli recipe instead. This recipe still has the core ingredients of a traditional bircher with the nuts and seeds (and oats, obviously) but it’s a little bit more fun and creamy. And it’s a really cute shade of pink.  

NUTRITIONAL INFORMATION  

The small amounts of the separate nuts and seeds really add up in this recipe, it provides a total of 17g of protein and 14g of fibre, which I’d say is pretty good for something that’s essentially an overnight oats recipe. As you probably know, chia seeds are packed with micronutrients, and the ones in this recipe provide your full daily omega 3 and 80% of your vitamin K. The strawberries provide 80% of you daily vitamin C, and the full recipe contains a quarter of your daily iron.  

If you opt for fortified non-dairy products, you’ll also get some added B vitamins and calcium. 

STRAWBERRY BIRCHER MUESLI RECIPE 

A healthy, creamy vegan overnight breakfast recipe. It only takes 5 minutes to prep then you’re good to go for the next morning.  And it’s easy to eat on the go and a cute shade of millennial pink.  This strawberry bircher muesli recipe contains all the core elements of a traditional bircher recipe with some added creaminess. 

This recipe is gluten free, dairy free and vegan. It does contain nuts and soy, although it could be free from soy depending on your choice of dairy replacements.  

Strawberry Bircher Muesli Recipe

Ingredients

  • ½ cup GF oats
  • 1/3 cup non-dairy milk I used vanilla soy
  • 3 heaped tbsp vegan strawberry yoghurt
  • 1 tbsp pumpkin seeds
  • 1 tbsp flaked almonds
  • 1 tbsp chia seeds
  • 100 g fresh strawberries

Instructions

  1. Combine your oats, almonds and seeds so that your dry ingredients are evenly mixed.
  2. Take half of your strawberries and mash with a fork in a mixing bowl. Add the dry ingredients to the bowl, then stir in the milk, your mix should be turning a light pink colour from the strawberries. If it isn’t, gently mash the mix a little bit more with your fork.
  3. Stir in the yoghurt then transfer your bircher mix to a jar or airtight container and leave in the fridge overnight, or for at least 4-5 hours.
  4. Once ready add the remaining strawberries to serve. Either eat straight from your jar or transfer to a bowl.
