GF Chocolate Crackers Recipe

Chocolate crackers? I wanted to make a little chocolaty snack that wasn’t too sweet, that could be used as something to dip into a sweeter sauce, so came up with this low sugar chocolate crackers recipe. They are designed to be eaten with something else, so they’re unlikely to satisfy your sweet cravings alone, but offer just enough to give some extra flavour to whatever you’re serving them with.  

But I couldn’t help myself and decided to experiment a little, and if you do want to serve them as a really low sugar cookie option, it’s possible. Not the sweetest of treats, but if you want something healthier with just a hint of sweetness, rolling roughly the amount of dough required to make three crackers into a round cookie shape does indeed create a low sugar chocolate cookie.  

Alternatively, you could cut them into larger rectangles and eat them as a breakfast biscuit. Being low sugar and oat based, they’re a good option for those who want something on the sweeter side on a morning but don’t want to start their day with something too sugary.

Each cracker contains 71 calories, 1g of fibre and 1.5g of protein.  

INGREDIENT CHOICES AND SUBSTITUTIONS  

I opted for a sweetened non-dairy milk here to give the crackers a tiny amount extra. In a batch this small, using a sweeter milk only equates to about half a gram of extra sugar per cracker, so it’s not making the world of difference from a health/ calorie perspective, so I’d recommend using a sweetened option, but you can, of course, opt for an unsweetened milk if you want to make this recipe as low sugar as possible.  

The milk and sugar for brushing are important. This step is to help the crackers get their texture, not to simply sweeten them, please don’t skip it if you’re trying to reduce your sugar intake.  

HOW TO STORE AND KEEP 

Store in an airtight tin or container and they should keep for up to two weeks. They do not need to be refrigerated, but as they have chocolate chips in them, they do keep better if they’re stored somewhere cool and away from direct sunlight.

This recipe is gluten free, dairy free and vegan friendly. It can be nut/ soy free depending on your choice of non-dairy milk and chocolate.

Ingredients

  • 100 g oat flour
  • 50 g cocoa flour
  • 2 tbsp sunflower oil
  • ½ cup non dairy milk + 2 tbsp
  • 30 g vegan chocolate chips/ chunks
  • 2 tsp caster sugar

Instructions

  1. Set your oven to 220c. Put all the ingredients in a bowl and mix with your hands to combine to a rough dough. Start with 1/3 cup of milk and add as necessary until you get a smooth texture. If it’s sticky, add a little more flour so it’s nice and smooth. Stir in your chocolate chips.
  2. Sprinkle your surfaces with a little flour, then roll out your dough to the thickness of a £1 coin, then use a knife and cut it into squares.
  3. Line a baking tray with greaseproof paper, then use a spatula to transfer your crackers to the baking tray.
  4. Brush the squares with a little non dairy milk (your extra 2 tbsp) and sprinkle with some sugar.
  5. Place your baking tray in the oven for 12-15 minutes. When you remove your tray, they should still be lightly soft to the touch (they’ll firm as the cool) but should not be stuck to the baking paper at all if you shake the tray a little. Leave to cool before serving.
