Vegan Parm Fries Recipe

Want an easy, delicious snack, making a meal and want a side dish that sounds a little fancier but is actually really easy to throw together? Look no further than this vegan parm fries recipe. This dish takes less than 10 minutes to prep and then can be pretty much left alone while they cook, it couldn’t be simpler, but adds a level to basic fries.  

NUTRITIONAL INFORMATION  

Each serving of this recipe contains 273 calories, 5g of protein and 5g of fibre. You’ll get two thirds of the recommended daily amount of vitamin C per serving, along with 60% of your daily B6 and 20% of your daily vitamin E, B1 and B3.  

INGREDIENT CHOICES AND SUBSTITUTIONS  

Can I use sweet potato fries?  

If you want to, sure. Sweet potato fries typically take a little less time to cook, so check them more frequently and expect them to take 5-10 less cooking time than the recipe below.  

Can I change the seasoning?  

Of course! Keep the salt and pepper the same, beyond that, you can switch the seasoning for anything you want.  

I PREFER THICKER/ THINNER FRIES 

I opted to make these an average fries texture. Chunkier or skinnier will require different cooking times. For skinner fries, reduce the heat to 175°c and cook for 5-10 minutes less. For thicker fries, keep the temperature the same, but they may take up to an hour to cook.  

HOW TO STORE, KEEP AND REHEAT 

If you’ve made a few too many and realised prior to cooking, that’s easier. Just store them in an airtight container and keep refrigerated for 3-4 days then continue cooking as per the instructions below.  

It’s a little bit harder if you’ve already cooked them, because you don’t want to make them soggy in the reheating process. Fries that are a little chunkier are easier to reheat and reheat in a really hot oven. Preheat your oven to 230°c and cook for 5 – 10 minutes, check after 5 minutes and every minute or two after that until they’re hot enough.

This recipe is gluten free, dairy free, soy free, nut free and vegan friendly. The vegan parmesan I used included coconut.

Ingredients

  • 1 kg raw potatoes
  • 2 tbsp sunflower oil
  • 1 tsp dried rosemary
  • ½ tsp chilli flakes
  • ¼ tsp garlic powder
  • Salt
  • Generous amount of pepper
  • 25 g vegan parmesan

Instructions

  1. Preheat oven to 190°c. Line a couple of large baking trays with greaseproof paper.
  2. Chop your potatoes into thick fries. You can peel them or opt for skin on, I personally prefer skin on fries so left them as they were.
  3. Add your potatoes to a large mixing bowl along with the oil, rosemary, garlic, pepper and chilli. Thoroughly combine until all of the fries are evenly coated.
  4. Transfer the fries to the lined baking trays. Spread evenly so they have space, do not crowd the trays. Sprinkle the trays with a generous amount of salt then place in the oven.
  5. Remove from the oven every 10-15 minutes to toss the fries and ensure they aren’t sticking. If you know you have hot spots in your oven, switch the trays so they cook evenly. Cook for a total of 45-50 minutes. Remove the fries from the oven 5-10 minutes before they’re finished and sprinkle with the grated parmesan. Return to the oven to complete the cooking time.
