Gluten Free Orange Mug Cake

This microwave gluten free vegan orange mug cake recipe can be a simple dessert for one or a little breakfast treat depending on your choice of add-ins and toppings. Mix in just a few minutes and 90 seconds in the microwave to have this little treat prepped in just 6-7 minutes.

Obviously, this is a single serving recipe, so the following information is for the full recipe, and it’s just for the orange cake base, without any add-ins or toppings.  

This recipe contains 206 calories, 4g of protein, 2g of fibre, 20% of your daily vitamin C and just over 10% of your daily B1.  

INGREDIENT CHOICES AND SUBSTITUTIONS  

I like to use a mix of oat flour and gluten free plain flour because I think exclusively using plain flour can make the cakes a little dry and the oat flour makes a lighter, fluffier base so the mix creates something that rises well with (in my opinion) the best texture. If you don’t want to take the extra step to use the oat flour as well, you can simply use gluten free plain flour, but you may need an extra ½ tbsp or so of milk. If you do not require this recipe to be gluten free, use the full ¼ cup of regular plain flour and you shouldn’t experience any texture issues.   

If you want to include some extras, a tbsp of chopped nuts or a tsp or two of chocolate chips (as shown) would also work well. To sweeten it up a little, add some syrup before serving but don’t add any extra sweetener to the mix.

Ingredients

  • ⅛ cup gluten free plain flour
  • ⅛ cup GF oat flour
  • ⅛ tsp salt
  • ¼ tsp baking powder
  • 1 tbsp light brown sugar
  • ½ tbsp vegan butter
  • 2 tbsp non-dairy milk
  • 1 tbsp orange juice
  • Zest of half an orange

Instructions

  1. Mix all the dry ingredients in a mug/ small microwave safe bowl. Add the vegan butter and lightly rub with your fingers until there are no lumps remaining.
  2. Add the orange juice and zest, then add the non-dairy milk. Start with 1 ½ tbsp of milk and check the texture to see if you need more. Your mix should have the texture of a thick cake batter.
  3. If you want to include add-ins, stir those in now.
  4. Microwave on high for 90 seconds. Add any syrup if using.
