Mint Chocolate Baked Oats Recipe

I know the baked oats trend has died off a little bit now, but it still makes a great winter breakfast option. And I thought a mint chocolate baked oats recipe would be perfect for the run up to Christmas, or even for Christmas morning.  

I’m going to apologise in advance, I went heavy on the mint flavoured recipes this Vegmas.  

This recipe is great if you’re having it in the run up to Christmas instead of the day itself. It only takes a few minutes to prep, then doesn’t require any further attention while it’s in the oven, so you can forget about it while you’re getting ready without it taking too much time out of your morning or robbing you of any extra time in bed.

INGREDIENTS CHOICES.  

I opted to make this recipe with a mint chocolate protein powder just to balance the macros a little and make it more filling, but you can skip the protein if that’s not your thing.  

You can use any milk of your choice, I used a regular nut milk in mine. But if you want to opt for something to make this recipe slightly more creamy and indulgent, you can opt for chocolate soy.  

NUTRITIONAL INFORMATION 

Each serving of this recipe contains an impressive 9g of fibre and 41g of protein. The high protein content largely comes down to the protein powder, but the Greek style yoghurt also helps. Most protein powders contain 20-25g per serving, so even without the protein powder, you’re looking at about 20g – which is pretty good for a simple oats recipe.  

 In terms of vitamins and minerals, it’s giving a lot in that department too. Each serving contains 4.2mg of iron, a third of your daily magnesium and 45% of your daily calcium. Assuming you’re using fortified dairy alternatives, each serving also contains a quarter of your daily B12 and 20% of the RDA of vitamin D.

STORAGE AND REHEAT

If you want to prep the oat mix prior to baking it, you can keep it in the fridge and cook it the next day and add a couple of extra splashes of milk before you cook it. However, this recipe does not work well reheated, so don’t be tempted to cook it fully the night before.

Ingredients

  • ½ cup GF oats
  • 1 scoop vegan mint chocolate protein
  • 1 tbsp cocoa powder
  • ½ cup non-dairy milk
  • 100 g Alpro Greek style yoghurt
  • 1 TSP peppermint extract
  • 15 g dark mint chocolate optional

Instructions

  1. Preheat oven to 175°c
  2. Blend together the protein powder (if using) and the milk of your choice.
  3. Mix the oats and cocoa powder together in a bowl, then stir in the wet ingredients, including the protein mix.
  4. Add the chocolate to the oat batter (if using), then transfer to an oven friendly dish.
  5. Bake for 20-25 minutes.
