Crispy Potato Skins Recipe (GF)

When it comes to potato skins, for me, the crispier the better, so that was the ultimate goal when it came to making this crispy garlic potato skins recipe. If you want potato skins that somewhat resemble a chip, this one isn’t for you.  

This recipe contains just five ingredients (technically 6 if we’re counting the salt) and they only take about 20 minutes to cook, so they’re a great option if you need a snack or starter that appeals to the masses, but you aren’t time rich.  

NUTRITIONAL INFORMATION  

Each serving contains 189 calories, 2.5g of fibre and 3.5g of protein. Thanks to the nutritional yeast, each serving also provides the full recommended daily amount of vitamins B1, B2 and B6 and half of your daily B3.

INGREDIENT CHOICES AND SUBSTITUTIONS  

I made these with the same potato flour mix I use for my Christmas potatoes; the herb flour helps to evenly season the potatoes and makes the flavours nice and balanced with every bite. But regular gluten free flour will do, especially if you’re in a hurry. 

The garlic and herb nutritional yeast can also be swapped for plain nutritional yeast, or skipped completely if you don’t want that hint of cheesy flavour in the mix. Alternatively, it can be skipped for another seasoning if you’d prefer to make them smoky or spicy etc. 

HOW TO STORE AND REHEAT 

They will keep in the fridge for up to three days. When it comes to reheating potato skins, you need to be careful; you don’t want them to get soggy and as they’re already crisp, you don’t want to make them too dry or burn them either. Preheat your oven to 220 and cook for 5 minutes to reheat.

Ingredients

  • 150 g potato peel approx. 5 medium potatoes
  • 2 tbsp olive oil
  • Pinch of salt
  • ½ tsp garlic Powder
  • 1 tsp garlic and herb nutritional yeast
  • 1 tbsp potato seasoning or flour

Instructions

  1. Preheat oven to 200°c. If you have good non-stick baking trays, there’s no need to line them, but if yours sometimes stick, line a baking tray with greaseproof paper.
  2. Spread your potato peel across some paper towels and pat dry to get as much moisture out of them as possible.
  3. Once dry, place them in a bowl and add all the remaining ingredients. Start with the oil and coat as evenly as possible, the add the dry ingredients and stir to combine.
  4. Transfer your coated potato peel to a baking tray and spread as evenly as possible across the tray.
  5. Place in the oven for 10 minutes, stir and flip your peel then return to the oven for a further 10-12 minutes until crispy.
