Strawberry Blended Overnight Oats Recipe

Now, I love overnight oats as they are, but I know some people aren’t keen on the texture. If that’s you, enjoy this creamy strawberry blended overnight oats recipe for an easy summer breakfast recipe.  

Of course, if you don’t mind or actually like the texture of overnight oats, you can still make this recipe by simply adding it all to the jar and giving it a stir. 

NUTRITIONAL INFORMATION  

This recipe serves two. One serving, including all the suggested add-ins, contains 303 calories, 11g of protein and 8g of fibre. Each serving also contains just over 75% of the recommended daily amount of vitamin C thanks to the strawberries and 20% of your daily calcium, provided you’re using fortified dairy alternatives.  

INGREDIENTS CHOICES AND SUBSTITUTIONS  

This recipe is shown with the add-ins but you don’t have to include them if you would rather keep things as simple as possible, but I think the little bites of the different textures add something when the base recipe is so smooth.  

I’ve opted for a sweetened milk in place of any additional sweetener like maple syrup as the only other sweetness in the base recipe is from the fresh fruit. If you’re adding all of the add-ins and think it will be too sweet or would prefer a lower sugar base recipe, feel free to switch to an unsweetened milk of your choice. 

HOW TO STORE AND KEEP  

Store in an airtight container and keep refrigerated. Consume within 2-3 days.

This recipe is gluten free, dairy free, and vegan. I opted for soy based dairy alternatives, but it can be nut free or soy free depending on your choice of dairy alternatives.

Ingredients

Base Ingredients

  • 100 g fresh strawberries
  • 1 cup oats
  • ½ cup vegan Greek yoghurt
  • ¼ cup sweet non-dairy milk

Add ins:

  • 100 g strawberries chopped
  • 10 g white chocolate chips
  • 25 g Urban Fruit Strawberry

Instructions

  1. Add the strawberries, Greek yoghurt and non-dairy milk to a blender and blend until smooth. Once the base ingredient liquids are combined, add the oats and blend again until smooth.
  2. Stir in any/ all of the add-ins you want to use, then transfer to two jars/ airtight containers and place in the fridge. Leave to set for at least four hours, ideally overnight, then eat when you’re ready.
  3. If you want to use any of the add-ins as a topping, add to your jars before serving.
