Sautéed Sweet Potatoes Recipe

Incoming controversial opinion, most of the time sweet potato isn’t all that. The regular potato reigns supreme, but this sautéed sweet potatoes recipe could have potentially changed the game for me. And by changed the game, I mean I now believe there is at least one way of cooking a potato that sweet potato wins These sweet potatoes are easy to cook and give you that savoury, salty fix while still being a healthier alternative to traditional fries or sweet potato fries. They pair well with any sandwich for lunch and make a quick and simple side dish for dinner. 

NUTRITIONAL INFORMATION  

This recipe contains 2-3 servings, but the following information is based on two servings per recipe.  

Each half recipe serving contains 6g of fibre and 3.5g of protein. Per serving, you’ll get your full recommended daily amount of vitamin A, 20% of your daily B6, and between 10-20% each of your daily B5, vitamin K, and B1.  

SUBSTITUTIONS  

You can adjust the seasoning to make them milder or change the spices to better accompany the other dishes you’re serving with it. The peri-peri salt can be swapped for regular table salt, and the chip seasoning can be swapped for curry powder, herbs etc.  

HOW TO STORE AND DOES IT REHEAT?  

Refrigerate cooked sweet potatoes in shallow airtight containers or zip-close bags for up to 5 days. 

Sorry to break this to you, but the best way to reheat this recipe is actually to roast them. Not quick, I know, but it’s worth it for the texture. Heat your oven to 200 degrees, spread potatoes on a sheet pan and cover them in tin foil. Roast them until they’re warm all the way through, about 10-15 minutes.

Ingredients

  • 3 medium sweet potatoes or yams
  • Olive oil or another good-quality cooking oil
  • Peri peri Salt to taste
  • Pepper to taste
  • Garlic powder to taste
  • Schwartz Spicy Chip Seasoning

Instructions

  1. Slice each of the sweet potatoes into coin-shaped round slices, approximately ½-inch thick. For larger sweet potatoes, you may want to cut these coin shapes in half to make them closer to bite-sized pieces. Try to make sure all of your sweet potatoes are cut to roughly the same thickness so that they cook relatively evenly.
  2. Heat a thin layer of olive oil in a large skillet, frying pan, or cast-iron pan over medium heat. Place a single layer of sweet potato coin slices in the oil. Sprinkle the potatoes with salt, pepper, garlic powder, and spicy chip seasoning (if using), if desired. Lower the heat to medium low.
  3. Allow sweet potatoes to cook until slightly soft and browned, about 4 to 6 minutes, then flip. Sprinkle the other side with salt, pepper, garlic, and optional spices. Cook another 4 to 6 minutes, or until the sweet potatoes can be easily pierced with a knife.
  4. Repeat until all of the sweet potato slices are cooked, adding more oil to the pan as needed.
