Sweet Fried Pineapple Recipe

mentioned on Tuesday, pineapple is my ingredient of the month this month and I’m kicking things off with something quite simple. This sweet fried pineapple recipe is great as a snack, in a breakfast, or part of a dessert recipe. I’ve opted to serve mine here in a yoghurt bowl as a great warmer breakfast.  

I struggle a little with quick, warmer breakfast ideas for the winter months. I get sick of oats quite quickly, and prefer baked oats to regular oats anyway, but they can be time consuming, so recipes like this are perfect. The warm pineapple takes the edge off the cool yoghurt, and it’s great to get some fruit in too.  

NUTRITIONAL INFORMATION  

The number of servings in this recipe will obviously depend on how you’re opting to use it, here I’m sharing the nutritional information per half the recipe, as served in the photos with my breakfast bowl.  

Each serving of this recipe provides the full recommended daily amount of vitamin C, 10% of your daily folate, an eighth of your daily B1 and B6, and 20% of your daily B2. 

STORAGE AND KEEP 

You can keep this in an airtight container in the fridge for 3-4 days, but that somewhat removes the perks of cooking it. Yes, it will still be sweeter, but the texture won’t be so great. This is best served fresh unless you’re wanting to prep the pineapple in advance to use in a dessert recipe being prepped later/ the following day.

This recipe is gluten free, dairy free, soy free, nut free and vegan (depending on your choice of vegan butter brands).

Ingredients

  • ½ small pineapple
  • ½ tbsp. vegan butter
  • 2 tbsp maple syrup
  • ½ tsp. ground cinnamon optional
  • 1 tsp light brown sugar optional

Instructions

  1. Cut the pineapple into small bite-sized pieces.
  2. Set a large frying pan over medium heat and add the vegan butter, maple syrup, and cinnamon and sugar (if using). Stir to combine. Adding the sugar will lightly caramelise the pineapple and add some extra sweetness, highly recommended if you opt not to include the cinnamon.
  3. Add the pineapple pieces and fry for about 3 minutes on each side.
  4. Remove the pineapple from the pan and serve.
  5. Enjoy the pineapple as is, or serve it on top of a yoghurt bowl for breakfast, or include in desserts.
