Antioxidant Rich Beetroot Smoothie Recipe

I know it looks interesting, but I promise all you can taste is berries. Promise. This antioxidant rich beetroot smoothie contains four of your five-a-day, a boatload of vitamins and the antioxidant rich foods are great for your heart health and skin.  

NUTRITIONAL INFORMATION  

I didn’t add any extra protein powder, nut butter or healthy fats to this recipe, so this isn’t supposed to be a meal replacement. This is a drink, a nice, good for you, vitamin rich beverage to go alongside your breakfast, or as a little ‘snack’.  

Each smoothie contains 178 calories, 10g of fibre and 4.4g of protein. The full recipe provides the full recommended daily amount of vitamins C & K, 50% of your daily folate and 30% of your daily B2 and vitamin A. It also contains 20% of your daily vitamin E and B6. 

INGREDIENT CHOICES AND SUBSTITUTIONS  

I used some extra frozen blueberries to help with the colour a little, you can swap the frozen fruit for any other frozen fruit if you’d rather use something different. And the ginger is totally optional, but it adds a sharp freshness that’s great for a morning boost.  

DOES IT KEEP?  

Not really. You can keep it in the fridge for the same day, but that’s it. Shake well before drinking if you’ve left it to sit for a while.

This recipe is gluten free, dairy free, and vegan friendly. It can be nut and/ or soy free depending on your choice of non-dairy milk. For reference, I used hazelnut milk for this recipe. The colour may vary slightly depending on the milk used and the ripeness of your fruits.

Ingredients

  • 100 g fresh blueberries
  • 100 g fresh strawberries
  • 40 g spinach
  • 1 cooked beetroot
  • 50 g frozen blueberries
  • ¼ cup dairy free milk
  • 1 inch fresh ginger optional

Instructions

  1. Add all ingredients to a blender and blend until smooth.

Serve and enjoy!
