Vegan Cookie Dough Protein Bars Recipe (GF)

Easy cookie dough protein bars that only take 5 minutes to prep, are full of (mostly) natural ingredients and taste like a sweet dessert while providing a little protein boost. 

NUTRITIONAL INFORMATION  

Each protein bar contains 253 calories, 10g of protein and 3g fibre. One bar also contains 20% of your daily vitamins E and B2, and 1.6mg of iron.  

INGREDIENT CHOICES AND SUBSTITUTIONS  

You can swap the nut butter for any nut or seed butter of your choice. I only used peanut because it was the largest jar in the cupboard and an ingredient most people have to hand. 

The dark chocolate chips can be swapped for any alternative dairy free chocolate and the maple syrup can be swapped for any liquid sweetener such as agave or date syrup. 

I haven’t tried this, but anyone with a nut allergy could use WOW Butter or Crave P’Not Butter as a nut butter alternative if you don’t want to use a seed butter. 

HOW TO STORE AND KEEP 

Store somewhere cool and dry and they’ll keep for up to two weeks. You don’t need to store these in the fridge, but that may be the best option if you live in a warmer climate.

Ingredients

  • ⅓ cup almond flour
  • ½ cup oat flour
  • ½ cup runny nut butter
  • ⅓ cup roughly 40g Vegan Peanut Butter Protein Powder
  • ¼ cup maple syrup
  • ⅓ cup dairy free chocolate chips

Instructions

  1. Line your dish with greaseproof paper. I lined a 4×4 brownie dish, but you could also line a loaf tin if you want to cut in straight bars rather than squares.
  2. Add all of your ingredients other than the chocolate chips to a mixing bowl and use a hand mixer or spatula to combine until a dough has formed. You could also use the dough mode on a food processor if yours has one. Fold in the chocolate chips.
  3. Spread your mix evenly across your tin then place in the fridge for at least 30 minutes to set. Slice into 8 squares or bars.
