Olive Salsa Recipe

This olive salsa is the kind of side dish dreams are made of. Fresh olives, chillies, tomatoes, peppers and pine nuts topped with a smoky Middle Eastern inspired dressing are so delicious to eat even alone. Serve with crackers for a light snack or add it to your next mezze board.  

NUTRITIONAL INFORMATION  

I’m reluctant to add a set serving size to this recipe because there are so many dishes you could add this too or serve it with, but the following information is based on five servings per recipe.  

Each serving contains 164 calories, 3g of fibre and 2g of fibre. All the fresh ingredients in this dish add up to two thirds of the recommended daily amount of vitamin C per serving, as well as just under 20% of your daily vitamin E and 12% of your daily vitamin K.  

INGREDIENT CHOICES AND SUBSTITUTIONS  

You can swap the pine nuts for sunflower or pumpkin seeds if you’d prefer. The red pepper can be swapped for yellow or orange, but don’t substitute it for green because you want that extra sweetness.  

I only used pitted queen olives (my favourites) for this recipe, but you can use a mix of olive varieties if you want to add some additional contrast in flavours. 

HOW TO STORE AND KEEP 

Add any leftovers to a Tupperware box and store in the fridge. Make sure you give it a good stir before serving any leftovers to mix the dressing in again and ensure everything is well coated.

This recipe is gluten free, dairy free, soy free and vegan friendly. Pine nuts, despite technically being a seed, are classed as a tree nut in terms of allergens. See substitutions above for a nut free alternative.

Ingredients

Dressing

  • ⅛ cup olive oil
  • 1 tbsp balsamic glaze
  • ½ tsp sweet paprika
  • ½ tsp smoked paprika
  • 1 tsp ground cumin

Fresh Produce

  • 1 cup green olives
  • ½ small red onion diced
  • 1 cup chopped vine tomatoes
  • 1 green chilli chopped
  • 1 medium red pepper chopped
  • ¼ cup pine nuts

Instructions

  1. Chop all your produce then mix in a large bowl to combine
  2. Add all dressing ingredients to small dish and whisk with a fork to fully combine.
  3. Pour the dressing over the chopped produce and toss/ stir thoroughly once again ensuring the vegetables are well mixed and evenly coated.
  4. Stie in the pine nuts.

Serve and enjoy
