Vegan Marble Marzipan Cookies Recipe (GF)

Easy, one bowl gluten free vegan marzipan cookies recipe, ready in less than half an hour, and a simple bake easy to make with kids.  

Gooey, chocolatey and chewy, but still crunchy. Everything you could ever possibly want in a cookie recipe.  

NUTRITIONAL INFORMATION  

Each cookie contains 263 calories, 3g of protein and 2g of fibre. One cookie also provides 30% of the recommended daily amount of vitamin E and 1mg of iron.  

INGREDIENT CHOICES AND SUBSTITUTIONS  

You can swap the sunflower oil for the same volume of melted vegan butter if you would prefer to use that, and the dark chocolate chips can be exchanged for any vegan chocolate, but you won’t get the same marble appearance if you use a white chocolate alternative.  

I used white marzipan for this recipe. I haven’t tried it with golden marzipan, but I’m sure it would work just as well.  

I can’t recommend any flour alternatives as I’ve only tried this recipe with plain, but if you try these with almond or oat flour and they work, please let me know in the comments.  

HOW TO STORE AND KEEP 

Keep them in an airtight container and store them somewhere cool, but there’s no need to keep them in the fridge. One batch should last up to a week.

Ingredients

  • 1 cup GF plain flour 120g
  • ½ cup golden caster sugar 100g
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 150 g marzipan
  • 45 ml sunflower oil roughly 3 tbsp
  • 2 ½ Tablespoons water
  • ¼ cup dark chocolate chips

Instructions

  1. Preheat oven to 160ºC and line a large baking tray with greaseproof paper.
  2. Add the flour, sugar, baking powder, baking soda, and salt to a microwave-safe mixing bowl and mix. Break the marzipan into small pieces, add to the bowl and toss until coated. Toss a few times as you’re mixing the marzipan in, it looks like a huge amount as you’re adding it until you shake it.
  3. Make a well in the centre and add the wet ingredients.
  4. Place the uncovered bowl in the microwave for one minute. Gently mix the ingredients. Return to the microwave for another minute and stir again – the marzipan should have softened into the dough and be relatively smooth when you stir.
  5. Stir in your chocolate chips, as the dough is warm, they’ll start to melt instantly, creating the marble look as you stir.
  6. Use a large cookie scoop to portion out cookie dough onto the tray. You should get roughly 8 scoops and space them apart on the tray with room to spread.
  7. Roll the portioned amounts between your hands into a rough ball and flatten with your hands. The dough may feel slightly drier than regular cookie dough, but the texture of the marzipan as it cooks makes your centres gooey.
  8. Place the tray in the centre of the oven and bake for 7-8 minutes. Open the oven to let a tiny bit of air out and return to the oven for a further 7-8 minutes.
  9. Remove from the oven and allow to cool on the tray for ten minutes before serving or gently moving to wire racks to cool completely.
