There are very few treats as simple as a Rice Krispie treats to make, and one of the best things about them is that you can make them work for any season/ event. This year’s Rice Kripsie treats are mint chocolate favoured and topped with Moo Free snowballs to add something a little extra festive.

Ingredient Choices and Substitutions
I used the Tesco Free From Chocco Snaps, but most supermarket own brand options are suitable for gluten free and vegan diets. As for the marshmallows, I chopped some M&S Plant Kitchen marshmallows as a cheaper option than buying vegan mini marshmallows.
How to store and keep
Store in an airtight container away from direct sunlight and they should keep for 7+ days. There’s no need to refrigerate them unless you have nowhere cool to store them.

Ingredients
- 2 ¾ cups vegan GF chocolate rice cereal
- 140 g vegan mini marshmallows or chopped
- 2 tbsp vegan butter
- 1 tsp peppermint oil
- 25 g vegan mint chocolate of choice I used crushed peppermint crisps
To decorate
- 17 g white Moo Free Snowballs
- Optional: If you want to go all out add some Nomo reindeers to the top too.
Instructions
- In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted, then stir in the peppermint oil. Remove from heat.
- Add your cereal mint chocolate. Stir until well coated.
- Using a spatula evenly press mixture into a dish coated with cooking spray or lined with greaseproof paper. Press your snowballs and any other decorations into the top of the cereal mix. Leave to set and cool in the fridge.
- Once the chocolate has set, slice into bars or squares. This recipe makes 8 large bars or 12 smaller squares.
