Key Lime Pie Overnight Oats Recipe (Vegan & GF)

I’m well aware that overnight oats have been done to death and you’ve tried every flavour under the sun, but these key lime pie overnight oats taste as delicious as dessert with the creaminess of it too while providing you with all the slow release energy you need for the day ahead and a good amount of protein too. 

Just like the dessert, there’s a biscuit layer, topped with a delectable creamy citrus layer.  

NUTRITIONAL INFORMATION  

This recipe serves two. Each serving contains 494 calories, 17g of protein and 10g of fibre. One pot also provides 94% of the recommended daily amount of vitamin K and just over half of your daily calcium. It’s rich in other minerals too, with 4mg of iron, your full daily manganese and over a quarter of your daily magnesium.    

INGREDIENT CHOICES AND SUBSTITUTIONS  

I used the Schar gluten free digestives for this recipe, the Nush almond milk cream cheese and opted for Alpro for my Greek style yoghurt and my non-dairy milk. Of course, you can choose any brands you want, but you may end up with slightly different tastes and texture, and variations to the nutritional information.  

Please note that the almond milk cream cheese has a natural underlying sweetness to it from the almond base, opting for a cream cheese with an alternative base ingredient may make a difference to the overall sweetness of the dish.  

The maple syrup can be swapped for any alternative liquid sweetener of your choosing. 

HOW TO STORE AND KEEP 

Keep your prepped oats in an airtight container and keep them refrigerated. You can store them for up to 3-4 days.

This recipe is gluten free, dairy free, and vegan friendly. It does contain nuts and soy, but this can be avoided by opting for different dairy alternatives.

Ingredients

  • 1 cup GF oats
  • 1 cup non-dairy vanilla milk
  • 120 g vegan Greek style yoghurt
  • 75 g dairy free cream cheese
  • 4 GF Digestive Biscuits
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup
  • Juice of one lime
  • Zest of one lime optional

Instructions

  1. Crush your biscuits and divide evenly across the base of two jars.
  2. In a separate bowl whisk your dairy free cream cheese, vegan milk, maple syrup, lime juice and Greek style yoghurt until evenly combined.
  3. Stir your oats and chia seeds in another bowl to evenly disperse the chia seeds, add the lime zest (if using). Add your wet ingredients to your dry and stir until the dry ingredients are fully mixed in.
  4. Carefully spoon the oat mix over the crushed biscuits, evenly distributing it between the two jars/ pots. Optional extra: add more biscuit crumbs as a topping. Cover your oat pots/ add the lids and place in the fridge. Ideally, leave them overnight, but leave them at least two hours before serving.
