Beetroot Quinoa Recipe

Vibrant beetroot quinoa recipe. One pan recipe with one of your five a day. Serve as a side dish, mix into your favourite salad or mix with rice/ buckwheat to make a grain bowl.

Each serving contains 314 calories, 10g of protein and 9g of fibre. One serving also contains two thirds of the recommended daily amount of folate, 20% of your daily B6 and 3.7mg of iron.  

INGREDIENT CHOICES AND SUBSTITUTIONS  

This recipe contains minimal ingredients so there aren’t many substitutions to be made. I opted for tri-colour quinoa to add a little more depth to the recipe, but regular white quinoa works perfectly if that’s all you have.  

HOW TO STORE AND KEEP 

You can keep any leftovers in an airtight container in the fridge for up to three days. Reheat leftovers for a few minutes in the microwave, or eat cold.

This recipe is gluten free, dairy free, and soy free. Check your vegan pesto carefully, it’s likely the pesto will contain nuts if it’s store bought.

Ingredients

  • 50 g quinoa
  • 2 beetroot
  • 1 tbsp chilli pesto
  • 150 ml vegetable stock
  • 2 cloves garlic

Instructions

  1. Add your beetroot, garlic and pesto to a blender and mix until relatively smooth. Some small chunks are fine.
  2. Rinse your quinoa in a mesh strainer. Transfer to a small saucepan. Place the pan on low medium heat and toast for 1-2 minutes.
  3. Add the beetroot mix and vegetable stock to the pan. Bring to a simmer then put the lid on the pan. Cook for 12-15 minutes, covered, until the quinoa is cooked and all the liquid has gone.
  4. Leave covered for a further 10 minutes then remove lid and lightly fluff with a fork.

Serve and enjoy!
