Ingredient Choices and Substitutions
I think granny smiths work really well in this recipe as their tartness pairs well with the cinnamon and sugar to create a nice balance of flavours, but you can use another variety of apple if you don’t want to use the granny smiths for whatever reason. The cinnamon is also optional if you wish to skip it, but it’s not too overpowering for those who don’t love it, but don’t hate it either.

Ingredients
- 3 Medium Granny Smith Apples
- 3 tbsp light brown sugar
- 1 ½tsp cinnamon
- 1 sheet gluten free puff pastry
- Non-dairy milk for brushing
Instructions
- Preheat the oven to 175°c (350F).
- Peel, core, and slice the apples into thin slices, then cut the slices in half. Toss the apple pieces with the sugar, cinnamon. Bake the apple filling for 15 minutes. Remove from the oven and set aside. (Note: Do not turn the oven off at this point. You will be using it to bake the finished braid.)
- Using a pizza cutter or sharp knife, cut each side into strips about 1-inch wide down each side, leaving the centre third of the dough uncut. Spread the apple filling down the middle third of the dough. Fold strips of dough into the centre, crisscrossing the filling by alternating strips from each side. Lightly press ends to seal, and straighten out the braid with your hands, if necessary, to straighten. Use a pastry brush to lightly brush your dough with non-dairy milk. Sprinkle the dough lightly with sugar.
- Bake the braid in the oven for 25 minutes, or until golden brown. Remove from the oven and let the braid cool for several minutes before slicing.
